Baby Bok Choy Bonanza

Recipe includes:

Ingredients:

1 bunch baby bok choy (washed and trimmed)

2 cloves fresh garlic, minced

1 sweet onion, chopped

1 tablespoon Peanut or Canola Oil

1 can black beans, drained

1 can white beans

1 bell pepper

1 Portuguese sausage, cut into small cubes

Directions:

  1. Fill ¾ stock pot with water and bring to boil
  2. Add Portuguese sausage to frying pan and cook until crispy
  3. Drain excess oils and place cooked sausage on paper towels to absorb oil and set aside
  4. Heat peanut or canola oil in a deep sauce pan
  5. Add garlic and onion and sauté until tender
  6. Add Portuguese sausage and turn heat to low
  7. Add baby bok choy to boiling water and cook for 1 to 2 minutes
  8. Remove bok choy and place into ice cold water
  9. Turn heat up on pan with Portuguese sausage
  10. Add black and white beans to pan
  11. Add bell pepper and bok choy, simmering for 5 to 8 minutes, stirring occasionally
  12. Add salt to taste and serve

Recipe makes 75 small servings.
