Baby Bok Choy Bonanza

Ingredients:
1 bunch baby bok choy (washed and trimmed)
2 cloves fresh garlic, minced
1 sweet onion, chopped
1 tablespoon Peanut or Canola Oil
1 can black beans, drained
1 can white beans
1 bell pepper
1 Portuguese sausage, cut into small cubes
Directions:
- Fill ¾ stock pot with water and bring to boil
- Add Portuguese sausage to frying pan and cook until crispy
- Drain excess oils and place cooked sausage on paper towels to absorb oil and set aside
- Heat peanut or canola oil in a deep sauce pan
- Add garlic and onion and sauté until tender
- Add Portuguese sausage and turn heat to low
- Add baby bok choy to boiling water and cook for 1 to 2 minutes
- Remove bok choy and place into ice cold water
- Turn heat up on pan with Portuguese sausage
- Add black and white beans to pan
- Add bell pepper and bok choy, simmering for 5 to 8 minutes, stirring occasionally
- Add salt to taste and serve
Recipe makes 75 small servings.
