Bread Pudding Bar

Recipe Includes:

  • Less fat, sugar, and salt

Ingredients:

20 slices whole grain bread

¼ cup oatmeal

1/8 cup wheat germ

2 cans (12-ounce) fat-free evaporated milk, diluted with ½ cup water

8 egg whites

1 ½ cups frozen blueberries, no sugar added or fresh fruit (or applesauce)

1 cup applesauce

1 cup sugar

2 teaspoons vanilla

½ teaspoon cinnamon

½ cup margarine

 

 

Directions:

 

  1. Cut bread into cubes and mix with wheat germ
  2. Scald milk with oatmeal, cooking slightly
  3. Add scalded milk and remaining ingredients except margarine, mixing gently
  4. Place mixture into greased 9”x13” pan
  5. Cut margarine into cubes and place evenly on top
  6. Bake at 350 degrees for 45 minutes to 1 hour

Recipe makes 75 small servings
