Jabaw (Jasmine’s Sabaw)

Recipe includes:

Ingredients:
3 pounds Chuck Roast, fat removed and cut into cubes
2 1” pieces of ginger (1 crushed and 1 chopped)
4 cloves of garlic (2 crushed and 2 chopped)
1 ½ can low-sodium chicken broth
7 cups water
1 teaspoon salt
1 whole tomato, chopped
1 bell pepper, chopped
1 whole onion, sliced
10 peppercorns
2 bay leaves
1 bunch baby bok choy (cut into 2” pieces)
1 bunch choi sum (cut into 2” pieces)
1 bunch Chinese cabbage (white stem)
3 large potatoes (peeled and chopped)
Directions:
- Boil 2 crushed garlic cloves, 1 crushed ginger piece, and meat in a large pot of water until meat turns brown.
- Rinse meat thoroughly
- Re-boil soup adding ginger, garlic, and chicken broth, salt, and 7 cups of water
- Add peppercorns and bay leaves
- Bring soup to boil
- Add choi sum, white stem cabbage, and baby bok choy to soup
- Boil on medium-high for 20 minutes
- Add potatoes
- Simmer for 35 minutes
