Peach Cobbler

Recipe includes:
- Whole grains
- Fruit
- Less fat, sugar, and salt
Ingredients:
6 cups diced peeled peaches
¼ cup sugar/splenda mix
1 tablespoon cornstarch
½ teaspoon ground cinnamon
½ teaspoon lemon rind, grated
2 tablespoon fresh lemon juice
Topping Ingredients:
½ cup whole wheat flour
½ cup oats
½ cup brown sugar
2 tablespoons margarine
2 tablespoons vegetable oil
1 teaspoon ground cinnamon
Directions:
- Combine first set of ingredients in a bowl
- Spoon into an 11×17 baking dish
- Combine topping ingredients in a small bowl
- Toss with a fork until well blended
- Sprinkle evenly over peach mixture
- Bake at 350 degrees for 40 minutes
Makes 75 small servings
