Peach Cobbler

Recipe includes:

  • Whole grains
  • Fruit
  • Less fat, sugar, and salt

 Ingredients:

6 cups diced peeled peaches

¼ cup sugar/splenda mix

1 tablespoon cornstarch

½ teaspoon ground cinnamon

½ teaspoon lemon rind, grated

2 tablespoon fresh lemon juice

 

Topping Ingredients:

½ cup whole wheat flour

½ cup oats

½ cup brown sugar

2 tablespoons margarine

2 tablespoons vegetable oil

1 teaspoon ground cinnamon

 

Directions:

 

  1. Combine first set of ingredients in a bowl
  2. Spoon into an 11×17 baking dish
  3. Combine topping ingredients in a small bowl
  4. Toss with a fork until well blended
  5. Sprinkle evenly over peach mixture
  6. Bake at 350 degrees for 40 minutes

Makes 75 small servings
