Chicken Long Rice

Chicken Long Rice

Recipe makes about 5 servings

What you need:

2 tablespoons olive oil

2 small packages long rice (bean thread)

1 pound of boneless skinless chicken thighs

½ head of chopped garlic

1 chopped medium onion

4-inch piece of ginger, cut into pieces and smashed

4 tablespoons low salt shoyu

1 small package of dried shiitake mushrooms

6 cans of low sodium chicken broth

2 medium carrots, sliced

1 small chinese cabbage, shredded

2 small bok choy, sliced

3 teaspoons sherry wine

What to do:

  1. Soak long rice in warm water
  2. Soak shiitake mushrooms in warm water
  3. Heat oil in pot and add chicken shoyu, garlic, onion, and ginger
  4. Cook until chicken is no longer pink (about 10 minutes)
  5. Add shitake mushrooms and cook for 3 minutes
  6. Add chicken broth, long rice, carrots, Napa cabbage, and bok choy, and sherry
  7. Boil for 30 minutes until the long rice noodles are clear
