Cold Noodle Salad

Cold Noodle Salad

(Adapted from Emeril Lagasse’s “Emeril’s Cold Noodle Salad”)

What you need:

2 teaspoons honey

1/3 cup low salt shoyu

1 teaspoon rice vinegar

1/2 teaspoon sesame oil

1 pound whole wheat or soba noodles

1/2 cup thinly sliced green onions

1/2 cup bean sprouts

1/2 cup thinly sliced carrots

1/2 cup thinly sliced cucumbers

1 cup crushed cashews

3 tablespoons chopped fresh Chinese parsley

2 tablespoons black sesame seeds

What to do:

  1. Wash your hands and clean your cooking area
  2. Boil noodles until they are soft, cool in ice water, drain, and set aside
  3. In a small bowl, mix together honey, shoyu, rice vinegar, and sesame oil
  4. Add green onions, bean sprouts, carrots, cucumbers, cashews, Chinese parsley, and sesame seeds to noodles
  5. Add shoyu mixture to noodles
  6. Serve on a separate plate and enjoy!
