Cold Noodle Salad
Cold Noodle Salad
(Adapted from Emeril Lagasse’s “Emeril’s Cold Noodle Salad”)What you need:
2 teaspoons honey
1/3 cup low salt shoyu
1 teaspoon rice vinegar
1/2 teaspoon sesame oil
1 pound whole wheat or soba noodles
1/2 cup thinly sliced green onions
1/2 cup bean sprouts
1/2 cup thinly sliced carrots
1/2 cup thinly sliced cucumbers
1 cup crushed cashews
3 tablespoons chopped fresh Chinese parsley
2 tablespoons black sesame seeds
What to do:
- Wash your hands and clean your cooking area
- Boil noodles until they are soft, cool in ice water, drain, and set aside
- In a small bowl, mix together honey, shoyu, rice vinegar, and sesame oil
- Add green onions, bean sprouts, carrots, cucumbers, cashews, Chinese parsley, and sesame seeds to noodles
- Add shoyu mixture to noodles
- Serve on a separate plate and enjoy!
