Fish Stew in a Snap

Recipe includes:

What you need:
2 pounds red potatoes, cut into medium-sized chunks
½ pound snapper, mahi, or any fish, cut into cubes
2 (14 ounce) cans 99% Fat Free, No MSG Chicken Broth
1 (1-inch) piece of ginger, peeled
3 cloves of garlic, crushed
½ chopped onion
1 (14 ounce) can diced tomatoes
¼ teaspoon sage
1 tablespoon brown sugar
2 stalks (about 3 tablespoons) Thai basil leaves, chopped
2 stalks (about 1 ½ Tablespoon dried) oregano, chopped
1 tablespoon butter
1 tablespoon curry powder
3 tablespoons flour mixed with 3 tablespoons water
What to do:
- Boil ginger, garlic and onion in chicken broth for 30 minutes
- Add remaining ingredients (except flour mixture) and simmer for 30 minutes until potatoes are cooked
- Add flour mixture and cook for at least 3 minutes while stirring. Try not to mash potatoes while stirring.
- Remove pot from heat and stir in cubed fish until heated through. Ono with poi
