Hearty Seafood Stew

Recipe includes:

What you need:
1 lb. Opah
1 lb. Peeled and deveined Shrimp
6 Cloves Garlic
1 Medium sized purple onion
2 Green Papaya
1 Medium sized butternut squash
1 Head of cabbage
2 Cups of shelled edamame
1/2 Cup balsamic vinegar
1 Can of Coconut Milk
1 Diced Hawaiian chili pepper
What to do:
- Cut the Opah into bite sized cubes and refrigerate
- Mince the Garlic and Onion
- Peel and cut the Papaya and Butternut Squash into bite sized pieces
- Core and cut cabbage
- Pour ½ cup of water into stew pot on medium heat
- After water has heated place garlic and onion into water and let steep for 5 minutes
- Place cabbage into pot and put the lid on. Stir occasionally until cabbage sweats
- Place green papaya, butternut squash, 1 cup of balsamic vinegar, and coconut milk into pot
- Using the can that coconut milk was in fill twice with water and pour into pot
- Salt and pepper to taste. Place the lid on pot and stir occasionally until squash is soft
- Place chili pepper into pot and stir for 3 minutes
- Place Opah, Shrimp, and edamame into pot and stir.
- Place lid on pot and turn down heat to simmer. Let simmer for 1 hour
- Feeds approximately six
