Mango Cheesecake Squares

Recipe includes:

What you need:
Crust:
2 cups sifted flour
½ cup powdered sugar
1 ½ sticks of low fat butter
Second layer:
1 8 ounce package low fat cream cheese
½ cup sugar
1 teaspoon vanilla
1 8 ounce package of fat free Cool Whip
Top layer:
3 envelopes unflavored gelatin
1 cup cold water
1 cup boiling water
1 cup sugar
5 cups fresh mango
4 tablespoons lemon juice
What to do:
- Mix flour and powdered sugar in a bowl and cut in butter
- Press crust into 9×13 inch pan and bake at 350 degrees for 20-25 minutes
- Mix together cream cheese and flour together. Add vanilla. Fold in the Cool Whip and spread on cooled crust. Chill until firm
- Sprinkle gelatin over cold water. Add boiled water, sugar, lemon, and mix well. Add mango cubes. Chill until slightly firm
- Pour over second layer and refrigerate.
- Cut into squares and enjoy!
