Mango Cheesecake Squares

Recipe includes:

What you need:

Crust:
2 cups sifted flour
½ cup powdered sugar
1 ½ sticks of low fat butter

Second layer:
1 8 ounce package low fat cream cheese
½ cup sugar
1 teaspoon vanilla
1 8 ounce package of fat free Cool Whip

Top layer:
3 envelopes unflavored gelatin
1 cup cold water
1 cup boiling water
1 cup sugar
5 cups fresh mango
4 tablespoons lemon juice

What to do:

  1. Mix flour and powdered sugar in a bowl and cut in butter
  2. Press crust into 9×13 inch pan and bake at 350 degrees for 20-25 minutes
  3. Mix together cream cheese and flour together. Add vanilla. Fold in the Cool Whip and spread on cooled crust. Chill until firm
  4. Sprinkle gelatin over cold water.  Add boiled water, sugar, lemon, and mix well. Add mango cubes.  Chill until slightly firm
  5. Pour over second layer and refrigerate.
  6. Cut into squares and enjoy!
