Mangolicious Bars

Recipe includes:

  • Whole grains
  • Colorful fruit
  • Less sugar, fat, and/or salt

What you need:

Crust:
2 cups whole wheat flour
1/4 cup splenda/sugar blend
1 cup margarine

Filling:
4 cups mango, chopped
3/4 cup splenda/sugar, divided
1/3 cup water
1 teaspoon lemon juice
3 tablespoons cornstarch
3 tablespoons water
2 cups whole oats
1/4 cup whole wheat flour
2/3 cup margarine

What to do:

For crust:

  1. Combine flour and sugar, cut in margarine
  2. Press in 9×13 inch pan
  3. Bake at 350 degrees for 7-10 minutes or until lightly brown

For filling:

  1. In a saucepan, combine mangoes, 1/2 cup splenda/sugar blend, 1/3 cup water and lemon juice
  2. Cook for 10 minutes or until mangoes are tender
  3. Combine cornstarch and 3 tablespoons water
  4. Stir into mango mixture and cook until thickened
  5. Cool slightly, pour over prepared crust
  6. Combine oats, 1/4 cup flour, 1/4 splenda/sugar blend in a bowl; cut with margarine
  7. Sprinkle over mango mixture
  8. Bake for 50 minutes at 350 degrees
  9. Cool and cut
