Mint & Lemon Tofu Cheese Pie

Recipe includes:

What you need:
Pie Filling:
1 package soft tofu
6 ounces low-fat yogurt
6 Tablespoons sugar
1 Tablespoon lemon juice
1 Package (0.6 ounce) gelatin, dissolved in 4 tablespoons of water
5-6 bunches of fresh mint leaves
Pie Crust:
2 packages (8 pieces) of whole-wheat graham cracker
1 Tablespoon Butter
2 Tablespoons Soymilk or Skim milk
What to do:
- Put graham cracker in a ziplock bag and break into little pieces
- Mix with melted butter and milk and spread in 9-inch tart pan
- Put tofu, yogurt, sugar, lemon juice, and mint in a blender and mix well
- Put gelatin in water and microwave for 20 seconds
- Pour tofu mixture into the pan and chill until firm
- Serve topped with fresh mint
