Mint & Lemon Tofu Cheese Pie

Recipe includes:

What you need:

Pie Filling:
1 package soft tofu
6 ounces low-fat yogurt
6 Tablespoons sugar
1 Tablespoon lemon juice
1 Package (0.6 ounce) gelatin, dissolved in 4 tablespoons of water
5-6 bunches of fresh mint leaves

Pie Crust:
2 packages (8 pieces) of whole-wheat graham cracker
1 Tablespoon Butter
2 Tablespoons Soymilk or Skim milk

What to do:

  1. Put graham cracker in a ziplock bag and break into little pieces
  2. Mix with melted butter and milk and spread in 9-inch tart pan
  3. Put tofu, yogurt, sugar, lemon juice, and mint in a blender and mix well
  4. Put gelatin in water and microwave for 20 seconds
  5. Pour tofu mixture into the pan and chill until firm
  6. Serve topped with fresh mint
