Murasaki Imo Mochi

Recipe includes:

What you need:
1 pound mochiko (sweet rice flour)
¾ cup sugar
1 teaspoon baking soda
1/8 teaspoon salt
1 (14-ounce) can light coconut milk
1 ¼ cups water
2 cups Okinawan sweet potato
1/3 cup minced candied ginger
What you do:
1. Peel and shred Okinawan sweet potato
2. In a large bowl, stir together mochiko, sugar, baking soda, and salt
3. Add coconut milk and water; mix until smooth
4. Stir in okinawan sweet potato and candien giner
5. Pour into 13 x 9 inch baking pan coated with cooking spray
6. Bake 1 hour in a 350 degree oven
7. Cool and cut into squares.
