Quick & Healthy Pinakbet

Recipe makes about 5 servings

What you need:

4 tablespoons olive oil

2 teaspoons chopped garlic

2 medium tomatoes, cut into small pieces

1 large eggplant cut ends and into circles

6 medium winged beans, cut ends and in half

10 pieces of okra, cut ends

8 long beans, cut into 2 inch pieces

3 tablespoons and 1 teaspoon of low salt shoyu

1/4 cup water

What to do:

  1. Healt olive oil and add garlic to pan
  2. Stir garlic and cook until light brown
  3. Add tomatoes and cook for 1 minute
  4. Add eggplant and winged beans and cook for 3 minutes
  5. Add okra and cook for 2 minutes
  6. Add long beans and cook for 2 minutes
  7. Add low salt shoyu and water
  8. Cook on low heat for 5 minutes
  9. Serve with brown rice and enjoy!
