Quick & Healthy Pinakbet
Recipe makes about 5 servings
What you need:
4 tablespoons olive oil
2 teaspoons chopped garlic
2 medium tomatoes, cut into small pieces
1 large eggplant cut ends and into circles
6 medium winged beans, cut ends and in half
10 pieces of okra, cut ends
8 long beans, cut into 2 inch pieces
3 tablespoons and 1 teaspoon of low salt shoyu
1/4 cup water
What to do:
- Healt olive oil and add garlic to pan
- Stir garlic and cook until light brown
- Add tomatoes and cook for 1 minute
- Add eggplant and winged beans and cook for 3 minutes
- Add okra and cook for 2 minutes
- Add long beans and cook for 2 minutes
- Add low salt shoyu and water
- Cook on low heat for 5 minutes
- Serve with brown rice and enjoy!
