Samoan Banana Porridge

Recipe makes 8 servings

What you need:

12 very ripe bananas

4 cups of water

1/2 package tapioca

1 cup canned evaporated 2% milk

2 teaspoons coconut extract

1/4 cup sugar

2 packets of Splenda

What to do:

  1. Peel bananas and place in large pot with water.
  2. Bring to boil and simmer slowly for 15 minutes.
  3. Mash bananas in pot and then add tapioca and simmer 10 additional minutes.
  4. Stir in evaporated milk, coconut extract, sugar and Splenda.
  5. Remove from heat and serve.
